Yummies!!

I’ve been compiling a small list of yummy, healthy things I’ve been snacking on this past week inbetween birthday shopping for my son and exercises. I swear, once things calm down here, I will be regularly blogging again.

My List!

Cheerios Mulitgrain Dark Chocolate Crunch…delicious! Its healthy for you, but they taste like Cocopuffs! They are super good for breakfast or a snack. I recommend.

Made with real fruit and veggie juice, its a yummy way to snack when that gummy candy feeling hits you. I love them. My son loves them. Win, win.

My mom has been buying soda…so I’ve had to really struggle to not drink them. I love soda, guys. Love it. I hate water. What sort of person hates water, you ask?? The sort who was raised by other water haters. Yeah. So I’ve been struggling…bad. In my fridge sits Sunkist and A&W. Along with MY stuff:

No where in my genetic code is it written that I love tea. I hate tea.I have just found tolerable tea. From left to right:

I’m still struggling, but I feel like I have a better hold on my healthy eating than I did and thats something, right?

Finally, a moment!

Today was a pretty good day. I went out walking twice with my family. The hardest walk was walk #2 because my son refused to walk. So, we had to break out the baby wearing wrap and and we put him in it on my back. My legs were not used to the extra 25 pounds. But, I kept going and pushed through. After a while, I couldn’t even tell I had almost 2 year old on my back. We saw some more deer and a turtle. Chase was pleased to be strapped on Mommy’s back!

I wish there was a way of knowing exactly how much work I did on that walk with the extra weight on! I might have to start doing it that way every day….well, maybe every week. 😉

Start Weight: 228.4 lbs

Current Weight: 222.0

Goal Weight: 170lbs

Why is this taking so long…? I wish I was one of those people that the weight just melts off of them. 😦 oh well….

Battle…

The past couple days, I’ve felt very down. Very…depressed. I haven’t even really wanted to eat, which is bad.

I think it stems from just…I don’t know. I went out for a walk the other day with my son and he started to run, so I chased. I could feel so strongly right then every jiggle…every wiggle…every flub of my stomach move. It made me sick. I wanted to cry. The worst part? The chase only lasted maybe a minute, I was exhausted. I was barely able to catch my breath. I wanted to collapse.

I cried in the shower. My husband asked after my shower why my eyes looked red and I told him I got shampoo in my eyes. I lied because I feel like he wouldn’t understand. I’m so disappointed in myself.

I know that weightloss isn’t instant, but damn. I mean, I see people losing weight around me that are dropping serious weight quickly. Why not me? Why is this so hard? Why can’t there be an easy, healthy short cut to lose weight?

I’m worried that come November, I’m still going to be huge in my maid of honor dress. I’m going to be the fat bridesmaid. My sister, who lost a bunch of weight and sometimes says very unhelpful things, is watching. Judging. I just feel like a failure. I feel like giving up.

I hate this feeling. I hate this struggle. I hate myself right now.

Ooooo I feel *NAUGHTY*

I have found yet another healthy alternative to sweets! Its so good, it’s bad!

Especially the peanut butter! I’m sad they only come four in a box. Thats the only downside.

Mexican Quinoa

Alright, I love this stuff. Its easy. Its inexpensive. Its healthy without cutting out taste!

Now, I cook my own way. As in, I measure like 2 things and then go by taste on everything else. So, bear with me. Also my first time posting a recipe, so I’m checking and double checking to make sure I have it all.

🔵 You Will Need🔵
4 cloves of garlic, minced (I use…8. I LOVE garlic, guys.)
2 tbs of olive oil, extra virgin
1 can black beans, rinsed
1 can diced tomatoes with green chiles
1 can sweet corn niblets
1 cup quinoa
2 cups of chicken OR vegetable broth
A guesstimate of cilantro, chopped
A guesstimate of cumin
A guesstimate of red pepper flakes
A guesstimate of black pepper
A guesstimate of chopped onion flakes (you can use real onion, I just dont because my eyes are too sensitive.)
A guesstimate of lime juice, optional

âš«Stepsâš«
1. Put olive oil in a pan with garlic cloves. Sautee until fragrant.
2. Dump the chicken broth in the pan.
3. Immediately add the quinoa, black beans, corn, and tomatoes.
4. Wait until it’s boiling, then add seasonings (except cilantro), cover and reduce the heat.
5. When the quinoa is fully cooked (when you can see the germ rings and all the liquid is gone), add chopped cilantro. Let sit for about ten minutes.
6. Serve, garnish with a little extra cilantro or cheese.

Also…these things are great! All the potato like qualities, none of the ick!

Bad Luck Barb

I think my son is catching whatever sickness my mom has. Which puts an even bigger damper on my workout schedule. With Chase getting sick and Joey (my husband) working 6 days a week, I’ll not have any time to myself to do anything.

We were going to go for a walk today and as soon as we got down the street, we got hit with a big downpour of rain. Just my luck! So I had to run back up the hill, which Chase calls “mountain” if that gives you any idea how steep it is.

On the way up, out went my knee. So that’s hurting. This is for sure one of those days I want to curl up and cry, “why me?!”

Instead, I’m continuing my healthy efforts with some dinner.

I love garlic. Love it. That might be from coming from the Garlic Capital of the World, but whatever. I love it.

In about 30 mins or so, I will have delicious Mexican Quinoa again. I’ll post the recipe later this evening, just in case anyone wants it. 💕

Rain, rain…

GO AWAY!!

I can’t go out on walks when you’re here!! Dang, Rain!

Also, my son scratched the eff out of my Zumba disc. So for now, its just healthy eating and crunches till I feel like I’m going to puke. 😕

Hubs and I discussed the gym membership, but its still up in the air. He is ok with me buying a new Zumba disc, though. So I’ll get on that today.

I hope everyone is doing well and reaching goals!

Dinner!

I wasn’t sure what I was going to make for dinner until Mom told me she wasn’t feeling well.

Whats good for sick? Chicken broth. Whats even better than that? Chicken soup. Even better than THAT?! Chicken and dumplings!

Getting back on track is delicious. Tuna sammich with lite mayo on toasted honey wheat bread. Diet raspberry white tea for bev. Yum!

I want to pick up boca burgers (because thats pretty close) and BBQ them up on Sunday. Sounds pretty yum to me!

No walking today due to rain and storms. Just a day to cuddle on the couch with my son and watch cartoons. Its ok. Everyone needs a break sometimes.
